Preparation of litti chokha is easy but it is time consuming. So when you are planning to make it, ensure you have enough time in your hand. For the stuffing you will require sattu which is gram flour roasted. If you do not have sattu, you can also use chana dal as an alternative but without the husk and grind them well in powder. Ingredients:

For the dough

  • 1½ cup wheat flour/atta
  • ¼ tsp baking powder
  • ¼ tsp ajwain/carom seeds
  • ½ tsp salt
  • 2 tbsp ghee / clarified butter
  • water for kneading

For the stuffing

  • 1 cup roasted gram flour / sattu 
  • 2 tbsp coriander (finely chopped)
  • 1 chili (finely chopped)
  • ½ tsp ginger garlic paste
  • ½ tsp cumin/jeera
  • ½ tsp onion seeds / kalonji / nigella seeds
  • ¼ tsp ajwain / carom seeds
  • ¼ tsp salt
  • 1 tsp lemon juice
  • 2 tbsp mustard oil

For potato chokha

  • 3 boiled potato
  • 1 chili (finely chopped)
  • 2 clove garlic (finely chopped)
  • 1 inch ginger (finely chopped)
  • 2 tbsp onion (finely chopped)
  • 2 tbsp coriander (finely chopped)
  • 1 tsp lemon juice
  • 2 tbsp mustard oil
  • ¼ tsp salt

The preparation time of this dish is around 10 minutes and the cooking time is 50 minutes. The total time that is required to prepare this dish is approximately 1 hr. This is a Bihari cuisine and the quantities mentioned above serve 2 people.

Process:

Litti dough preparation

  1. First take 1½ cup of wheat flour, ¼ tsp of baking powder, ½ tsp of salt, ¼ tsp of ajwain, and 2 tsp of ghee in a large mixing bowl. Then crumble the mixture and ensure that the ghee is mixed well. 
  2. Then add the required water and knead the dough. Ensure that the dough is soft and smooth. Then grease the dough with ½ tablespoon oil and cover it with a cotton cloth and let it rest for 20 minutes. 

Litti stuffing preparation

  1. Take a big mixing bowl and add 1 cup of sattu flour to it. Then add 2 tbsp of coriander, ½ tsp ginger and garlic paste, 1 chili, ½ tsp cumin seeds, ¼ tsp of ajwain, 1 tsp lemon juice, and ¼ tsp salt. 
  2. Then add 2 tbsp of mustard oil and combine the mixture well. 
  3. Ensure that the stuffing mixture of sattu is moist and not too wet or too dry. It should be of exact consistency. 

Method to stuff the littis

  1. Firstly when the dough has rested for 20 minutes, knead it once again slightly. 
  2. Then make small ball sized doughs from the main dough. 
  3. Then flatten the dough with your palms, press the edges of the dough and form a cup-like shape. 
  4. Now put the stuffing at the center and start to wrap the edges of the dough. Wrap it well so that it does not wear out during baking. 
  5. Once the doughs are filled with stuffings, place the rolled littis in appe pan that has been heated with oil. If you don’t not want to make this litti chokha recipe in appe pan you can even bake them in the oven. For that, place your litti doughs on the baking tray and bake them for 45 minutes at 180 degree celsius. Flip them in between. 
  6.  Check whether both the sides have turned brownish or not. Once they turn brownish. Take it out and serve it with ghee and chokha. 

Potato chokha recipe

To make the chokha, first, smash the boiled potatoes in a mixing bowl, add green chillies as per requirement, add garlic, ginger, mustard oil, lemon juice, onion, and salt to taste, some coriander leaves, and mix it well. Your chokha is ready to be served with litti.

For The Dough

INSTRUCTIONS

  • Take a big bowl, add the flour, salt, baking powder, and ghee and mix it well. Then add water as required and make a soft dough.

  • Keep the dough to rest for 20 minutes.

  • For the stuffing, take a mixing bowl, add the sattu, coriander (finely chopped), chili (finely chopped), ginger garlic paste, cumin / jeera, onion seeds / kalonji, ajwain / carom seeds, salt, lemon juice, mustard oil and make a moist mixture

  • Roll out small balls from the dough and make a cup-like shape. Then put the stuffing and wrap its edges.

  • Now put them in an appe pan or oven and bake them for 35-45 minutes turning the sides when required. Do this till it turns brown on both sides.

  • Now for chokha, take a bowl and mash the boiled potatoes, then add green chilies as per requirement, add garlic, ginger, mustard oil, lemon juice, onion and salt to taste, some coriander leaves, and mix it well.

  • Serve hot.
