Dum Paneer Kali Mirch Recipe

Paneer Dum Kali Mirch is a very unique Indian dish. As the name implies this delicious dish uses good amounts of Kali Mirch or Black Pepper powder in its gravy which is then cooked under pressure or dum where steam can’t be released. This is a spicy dish, and what is India without its spices!

Ingredients

For the onion paste

  • Onion – 3 Cups Sliced
  • Oil – 2 Tbsp
  • Water – 1/2 Cup

For the gravy

  • Ghee – 2 Tbsp
  • Elaichi / Green Cardamom – 4
  • Laung / Cloves – 6
  • Dalchini / Cinnamon – 1/2 Inch
  • Ginger Garlic Paste – 2 Tbsp
  • Green Chillies – 4 Chopped
  • Dahi / Yogurt – 5 Tbsp
  • Haldi / Turmeric – 1/2 Tsp
  • Kali Mirch / Black Pepper Crushed – 1.5 Tsp
  • Jeera / Cumin Powder – 1.5 Tsp
  • Dhaniya / Coriander Powder – 2 Tsp
  • Salt – 1.5 Tsp
  • Kashmiri Red Chilli Powder – 1.5 Tsp
  • Paneer – 350 Gm Cubed
  • Cream – 4 Tbsp
  • Water – 1 Cup
  • Kasoori Methi – 1 Tbsp Crushed
  • Dhaniya / Cilantro To Garnish

Procedure

Follow the steps to prepare this rich, tasty dish:

Step 1: 

Take the chopped onion and oil in a pan and fry them in medium flame till they turn brown. Stir the onions in between to ensure they are not getting burnt. 

Step 2: 

Once the onions turn brown, turn off the flame and let it cool. Then take the onions in a blender and blend them well till it turns into a fine paste. 

Step 3:

Now for the gravy, in a pan add ghee and put the flame in mid high. Then add Cloves, Green Cardamom, and Cinnamon. Cook them until fragrant or for about 1 minute.

Step 4:

Now add ginger and garlic paste and cook them till the raw smell of garlic and ginger goes off. 

Step 5:

Add green chilies and then cook for another 1 minute. And then cook the whole mixture for 4-5 minutes. 

Step 6:

Then add Black Pepper Powder, Turmeric, Coriander Powder, Cumin Powder, Salt, and Kashmiri Red Chilli Powder and mix them well. 

Step 7:

Now add the cottage cheese, cream, and water as per required. Mix them well with the gravy. 

Step 8:

Now cover the pan with the aluminum foil and then place the lid on top of that. Make sure that no steam comes out. Keep the flame low and cook that for a minimum of 15 minutes. 

Step 9:

Finally, remove the lid and foil and add garam masala and kasoori methi and mix the well. You Dum Paneer Kali Mirch is ready.

For The Onion Paste

INSTRUCTIONS

  • Make the onion paste by first frying the onions and then blending it into a paste.

  • Heat oil and add the cardamoms, cloves, and cinnamon till it’s nice and leaves a fragrant.

  • Now add onion paste and cook well.

  • Add ginger, garlic paste and cook till its raw smell goes off and green chili paste. Saute.

  • Cook and add coriander powder, cumin powder, pepper powder, Haldi, and rang mirch.

  • Add salt to taste. Cook and add paneer cubes and cream as well as water.

  • Seal the pan with aluminum foil and put a lid on top.

  • Reduce the flame and let it cook for 15 minutes.

  • Now open it and add garam masala and kasoori methi.

  • Serve hot.
